Plantation Chicken and Rice
A traditional style chicken soup, rich and hearty, soothes the soul.
Directions:
Dice 3 chicken breasts and bring to a boil in 2 quarts of water. Drop in soup and seasoning packets. Cook about 20 minutes or until rice is done, adding up to 2 more quarts of water as needed at alternate times depending upon how thick or thin you like your soup. Salt to taste. Serves 12 cups.
Optional:
For a creamy consistency, add 3/4 cup evaporated milk and simmer a few more minutes. For a fat free soup, use boneless, skinless chicken breasts or tenders.
